Afrutado Pineapple & Passion Fruit

Fermentation has always been a part of coffee production. But co-fermentation takes it a step further. By adding natural ingredients like fruits, spices, or botanicals during fermentation, the beans gain a new complexity without any artificial additives or flavorings after harvesting. This is not infusion, not flavored coffee. This is not a post-processing measure to disguise the coffee's quality. Here, flavor development happens at its source. At the microbial level, a unique metabolic process is initiated, releasing new aromatic components.

In co-fermentation, the process is meticulously controlled. The added ingredients interact with the coffee's natural enzymes, controlling the transformation and shaping the flavor in the cup. The result? A coffee that isn't just fermented, but completely reimagined.

This Afrutado is a natural co-fermented wine, designed to enhance the intensity of the original flavor profile. After harvesting, the whole cherries are fermented for 96 hours in an anaerobic environment with layers of pineapple and panela. The pineapple enhances the already complex acidity, while the panela adds sweetness and structure.

The coffee then dries for 15 days under covered drying beds. The result is an Afrutado that manages with fewer expressive flavor nuances but offers more layers than a classic fermentation.
