A Caturra from Finca Milán, co-fermented with maypop flowers and passion fruit, and processed using the Culturing Process developed by Café Uba in Risaralda. Alongside fruit, they use specially prepared starter cultures made from naturally occurring microorganisms to guide the fermentation toward a specific flavor profile.

In this case: full-on passion fruit flavor.

Fermentation has always been part of coffee processing. But co-fermentation takes it one step further. By adding natural ingredients such as fruits, spices, or botanical components during fermentation, the coffee develops additional layers of flavor, without artificial additives or flavoring after harvest.

This is not infusion. No post-harvest flavoring. The flavor is created directly at origin. On a microbial level, fermentation breaks down sugars, influences the coffee’s acidity structure, and releases new aromatic compounds that would not develop through conventional fermentation alone.

With co-fermentation, the process is deliberately guided. The added ingredients interact with the coffee’s natural enzymes, directing the transformation and shaping the final flavor profile in the cup.

The result? A coffee that is not simply fermented, but reimagined.
