In the Choc Bar Series, we highlight coffees that impressed us with exceptionally intense chocolate notes. Of course, almost every coffee has some degree of chocolate character. In most cases, these notes are primarily a byproduct of roasting. However, some coffees naturally possess a stronger cocoa foundation. Genetics, processing methods, and origin create the perfect base for developing dense, rich flavors reminiscent of a fine chocolate bar. That is exactly what the Choc Bar Series is all about.

Nestled in the Shevaroy Hills of southern India, MSP Coffee is one of Tamil Nadu’s most established coffee producers. For more than 100 years, this family-run company has been producing coffees of the highest quality. This particular lot, however, is not about tradition—it is about innovation.

By introducing locally grown papayas during fermentation, Ashok Rajes developed a processing method that combines the coffee’s naturally intense chocolate character with the vibrant fruitiness associated with progressive fermentation techniques.

The result is a coffee that tastes like a bar of dark chocolate filled with pieces of cherry.
